It was one of my New Years resolutions to try a new recipe everyday. What was I thinking! Believe it or not I have come pretty close to keeping this goal. I never tire of the cooking but all those dirty dishes! All the cooking has resulted in some new favorite dishes and of course many, many flops.
I can call these nuts one of my successes. This recipe involves just 5 ingredients and stirring (my ambitious goal is easier to keep if all the recipes are as simple as this one!). The mellow flavor of the cashew perks up quite nicely with the addition of curry and lime. The curry flavor is light and the lime adds a heavy dose of tang. They are dangerous for me to have around the house and I will eat them by the handful!

Curried Cashews with Lime
Ingredients
- 1 1/2 cups raw cashews
- 1/2 teaspoon salt
- 1/4 teaspoon curry powder
- zest of one lime
- juice of one lime (about 8 teaspoons)
Instructions
- Preheat the oven to 375 degrees and line a baking sheet with baking parchment. Stir together the cashews, salt, curry powder, lime zest and juice in a bowl. Spread onto the prepared pan. Bake for about 15 minutes, stirring about every five minutes or so, until the cashews are a nice golden brown. Store in an airtight container.
