The poor, lowly bran muffin! Sort of brown and homely, they won’t be winning any beauty contests! It doesn’t help their reputation that most of them are dry, fibrous affairs. We all know that we should be eating more fiber for our health but most whole wheat choices aren’t that tasty. I am betting that this recipe could help sway some hearts and minds. These muffins are soft and light, in spite of the extra roughage, and have just the right amount of sweetness. I think you could use these muffins to charm a picky eater into eating something healthy.
These muffins are so easy to make that it seems like they are almost instant. That might just be because they are one of my favorite breakfast treats and I have probably made them a hundred times. They are made with a short list of ingredients and they come together in a snap. They keep well in the freezer, so go ahead and stock up!
Ingredients
- 1 cup boiling water
- 1/2 cup raisins
- 1 cup bran
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup light brown sugar
- 1/3 cup oil
- 1 egg
Instructions
- Preheat the oven to 375 degrees, and line a muffin tin with paper muffin cups.
- Pour the boiling water over the raisins in a small bowl and allow to cool.
- Whisk together the bran, whole wheat flour, baking soda, baking powder, salt and cinnamon.
- In another bowl, whisk together the brown sugar,oil and egg. Stir the raisins into this mix once they are cool.
- Make a well in the dry ingredients, and add the wet ingredients all at once, stirring them together just until combined.
- Scoop into muffin tins. bake for 15 to 18 minutes.
