While the experts can’t seem to make up their minds on whether or not eating breakfast is a good idea, it remains my favorite meal of the day. I love eggs, pancakes, cereal, oatmeal, toast and jam, you name it! Then of course there are muffins. Muffins are considered a quick “bread” but I would say they are closer to cake in nature. In fact, I think muffins are just an excuse to eat cake for breakfast. What a great rationalization!
I think there are as many recipes for banana breads and muffins as there are stars in the sky! This one is a personal favorite. The muffins turn out soft and delicious and very cake like, yet they are lower in sugar, with much of the sweetness coming from all those bananas. These muffins have some nutrition snuck in, with whole wheat flour and wheat germ in the recipe, giving us another reason to indulge!
Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup wheat germ
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- one stick of unsalted butter, at room temperature
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 1/2 cups mashed banana (about 3 large bananas)
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 1 cup chopped walnuts
Instructions
- Preheat the oven to 350 degrees and line 16 muffin cups with paper liners.
- Whisk together the flours, wheat germ, baking powder, baking soda and salt. In another bowl whisk together the banana, buttermilk and vanilla. Set these mixtures aside.
- Beat the butter with a hand mixer until light and fluffy. beat in the sugar, mixing until well incorporated. Beat in the eggs, one at a time.
- With a rubber spatula stir in 1/3 of the flour mixture, then half of the banana mixture. Repeat with another third of the flour, the remaining banana mixture and then the rest of the flour. carefully stir in the walnuts, taking care not to over mix the batter.
- Using a 1/4 measure or spring-release scoop portion the batter into the muffin tins. bake the muffins for about 18 minutes and remove from the pans to cool on wire racks. These keep well in the freezer.
