Bar cookies must be one of the greatest inventions ever! Such a simple task with such great results, bar cookies are pleasure to make and eat. Spoon some flour, crack some eggs, stir in some chocolate, press the batter into a pan, and before too long you have a tasty treat in the oven!
These bars combine the mellow taste of cashews with brown sugar and chocolate to make something extra delicious! These cookies would be a great addition to your Memorial Day picnic. They are also are perfect for sending and got rave reviews from my nieces and nephew who got some of these in the mail.
The other great thing about bar cookies is that since the batter is baked within the four sides of a pan it can have more sugar than a typical cookie. Cookies with this much sugar baked in the traditional way on a sheet pan would just ooze off the pan and onto your oven floor! More sugar makes for some chewy bars, and these bake up with a marvelous crispy crust and a soft chewy center.
When you bake these cookies be sure and measure the flour by fluffing it up a bit and then spooning it into your measuring cup. You don’t want too much flour in the batter because it will compromise some of that delicious chewiness!

Ingredients
- 1 cup flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 stick unsalted butter, melted and cooled
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 teaspoon vanilla
- 1/2 cup roasted, unsalted cashews, roughly chopped
- 1/2 cup chocolate chips
Instructions
- Lightly butter a 8 inch square baking pan, line with baking parchment, then lightly butter the paper. Preheat the oven to 350 degrees.
- Whisk together the flour, baking powder and salt in a small bowl. In another bowl whisk together the butter and sugars. Whisk in the egg, egg yolk, and vanilla. Stir in the flour mixture and then the cashews and chocolate chips.
- Pour the batter into the prepared pan and bake for about 20 to 25 minutes until golden brown. Allow to cool on a wire rack. Cut into 16 pieces.
