It has been a while since I got around to posting anything but I am happy to share this easy bar cookie with you now!
[ssba-buttons]We have had a late spring snow storm here in Boulder and I’ve taken my usual morning walk to the local cafe. I am sitting here with my hot tea and no one would know it but I am working on my blog by eating a piece of this shortbread! My job is to taste it and describe it to you well enough to convince you to try the recipe. I assure you that you won’t be sorry if you do!
This easy bar cookie is buttery and delicious! The topping is made by stirring together chopped pecans, sugar and cinnamon. I think this bit of streusel makes them extra fancy. I am huge cinnamon lover and these bars satisfy that craving.
This recipe is a great one to add to your collection! It gets high marks for being so easy to make and having such tasty results. Enjoy!
Cinnamon Pecan Shortbread Bars
Ingredients
- 1 cup All-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon baking powder
- 1/4 teaspoon salt
- 1 stick butter
- 3 tablespoons light brown sugar
- 2 tablespoons granulated sugar
Topping ingredients
- 1 tablespoon granulated sugar
- 1/2 teaspoon cinnamon
- 1/4 cup coarsely chopped pecans
Instructions
- Preheat the oven to 300 degrees. Lightly grease an 8 inch square pan, line with baking parchment, then lightly grease the paper.
- In a small bowl, whisk together the flour, cinnamon, baking powder and salt.
- In a larger bowl, cream the butter until light. add the sugars, and cream until they are well mixed.
- Stir in the flour just until combined, then press the mixture into the prepared pan.
- Stir together the topping ingredients and sprinkle them over the crust.
- Bake the cookies for about 30 to 35 minutes until nicely browned. Cut them in the pan while they are still warm. Allow them to finish cooling on a wire rack.
