Hearty Peanut Butter Cookies with Oats and Bran
Ingredients
- 3/4 cup flour
- 1/2 cup bran
- 1/2 cup rolled oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- One stick unsalted butter, at room temperature
- 1/2 cup natural peanut butter
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla
Instructions
- Preheat the oven to 350 degrees and line 2 baking sheets with baking parchment.
- Stir together the flour, bran, oats, baking soda, and salt.
- In another bowl beat the butter until it is light. Beat in the peanut butter. Add the sugars, one at a time, beating well after each addition. Beat in the egg and vanilla.
- Using a wide spatula, stir the flour mixture into the butter mixture.
- Shape into 2 tablespoon sized balls. Bake the cookies until golden brown, about 15 minutes.
