I love simple.
As time goes on I continue to pare down my life. Last year I read The Life-Changing Magic of Tidying Up, and I took all of it to heart. I followed the advice to the letter, emptying every closet, nook and cranny of my condo. I would guess that I got rid of nearly half of my stuff! Even now, over a year later, I have kept all these habits and my place is still clutter free. Only things I really cherish remain. This makes for a lot of breathing room in my home which feels fabulous. I feel physically lighter as a result, and I know I am much more focused on the task at hand.
This cookie is a great example of simple. It is a delicious honey soaked delight, made with whole wheat flour. The honey plays along with the nutty taste of the whole wheat flour, and nearly disguises the grainier texture. It is a simple cookie that tastes like home! These cookies keep well in an airtight container and tasted better the day after I made them.
Ingredients
- 2 cups whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick butter
- 1/2 cup brown sugar
- 1/2 cup honey
- 1/2 teaspoon vanilla
- 1 large egg
Instructions
- Preheat the oven to 350 degrees and line 2 large baking sheets with parchment.
- Whisk together the whole wheat flour, baking soda and salt.
- In another bowl, beat butter until it is light. Beat in the brown sugar, and then the honey. Beat in the egg until the mixture is light and fluffy.
- With a spatula, stir in the whole wheat flour mixture.
- Using a 2 tablespoon scoop portion the dough onto the prepared sheets.
- Bake for 15 minutes until golden brown.
